Mix / Pan / Flip / Done — But Make It Pink

A system is good, knowing how to use it is even better.

The previous posts were about systems, this one is about practice.

Practice makes perfect or at least significantly better breakfasts.

Today we are revisiting an old friend:

Mix / Pan / Flip / Done.

Except this time: we are making it slightly more elaborate.

Not difficult, not chef-level.

Not a three-hour Sunday project.

Just enough personality to remind you that food can be enjoyable again.

Because now that you have a little more energy: you can do more than survive breakfast.

You can actually enjoy it and before we begin, a quick disclaimer.

I do have your health in mind, however:

I am not a fitness influencer.

I am not here to discuss macros, calorie deficits, fat-burning zones or whether cinnamon activates ancient metabolic powers.

I assume you are a responsible adult.

You know the difference between:

  • breakfast

  • eating cookies continuously until noon

Now that this important matter has been addressed:

Let's make pancakes!

Strawberry & Pecan Pancakes

Soft, slightly pink, sweet and comforting.

And still simple enough for a weekday morning.

What you need

  • 1 egg

  • 120 ml lactose-free milk or plant milk

  • 80 g gluten-free flour

  • 1 teaspoon baking powder

  • 1 to 2 tablespoons honey, maple syrup or sugar

  • 1 tablespoon neutral oil

  • a pinch of salt

  • 4 to 5 strawberries

  • a small handful of pecans, lightly chopped

  • 1 teaspoon cinnamon

Optional:

  • vanilla extract

  • extra cinnamon

  • extra strawberries for topping

Because Spring is not the season for restraint.

Mix

Place the strawberries in a blender or mash them thoroughly with a fork until they become a smooth purée.

Add:

  • egg

  • milk

  • oil

  • sweetener

Mix together.

Then add:

  • flour

  • baking powder

  • salt

  • cinnamon

Mix until you obtain a smooth batter.

The strawberries will naturally tint the batter a delicate pink.

Which is completely unnecessary and therefore delightful.

Fold in the chopped pecans, not too small you need to feel it.

Not too large, we are looking for surprise crunch not dental challenges.

Pan

Heat a lightly oiled pan over medium heat.

Pour small circles of batter.

Small pancakes flip better.

This is strategy.

Not weakness.

Flip

When bubbles appear and the edges begin to set:

Flip.

Cook another minute or two and… If the first pancake looks strange: that is the sacrifice pancake.

Every batch has one, we thank it for its service and continue.

Done

Stack them.

Eat them warm.

Add:

  • maple syrup

  • honey

  • strawberries

  • yogurt

  • more pecans

Whatever makes you happy.

Because this breakfast is no longer an emergency, it is an experience.

And experiences deserve toppings.

Spring nourishment is not about eating more perfectly.

It is about remembering that food can be practical and joyful at the same time.
